Palomino (grape)
Palomino is a white grape variety that is most commonly used in the production of Sherry, a fortified wine from Spain. It is named after Fernán Palomino, a 13th-century Spanish knight.
History
The Palomino grape has a long history in Spain, particularly in the region of Andalusia. It is believed to have been introduced to the region by the Phoenicians in the 12th century BC. The grape was later named after Fernán Palomino, a knight in the service of King Alfonso X of Castile in the 13th century.
Characteristics
Palomino grapes are known for their high yield and resistance to diseases. They have a relatively low acidity, which makes them ideal for the production of Sherry. The grapes are typically harvested in early September. The resulting wine is often characterized by its light, delicate flavor and pale color.
Viticulture
Palomino is the most widely planted grape in the Jerez region of Spain, where it is used to produce the majority of the region's Sherry. It is also grown in the regions of Rías Baixas and Valdeorras. Outside of Spain, Palomino is grown in South Africa, where it is used to produce a variety of wines, including Sherry-style wines.
Wine Production
The Palomino grape is primarily used in the production of Sherry, a fortified wine that is produced in the Jerez region of Spain. The grape's low acidity and high sugar content make it ideal for this type of wine. The process of making Sherry involves fermenting the Palomino grapes and then fortifying the wine with a distilled spirit, typically brandy. The wine is then aged in oak barrels, which gives it its distinctive flavor.
Food Pairing
Sherry made from Palomino grapes pairs well with a variety of foods, including tapas, seafood, and cheese. It is also often served as an aperitif.
