Kulfi
Kulfi
Kulfi (/kʊlfiː/) is a popular frozen dairy dessert from the Indian subcontinent. It is often described as "traditional Indian ice cream". Unlike Western ice creams, Kulfi is not whipped, resulting in a solid, dense frozen dessert similar to traditional custard-based ice cream.
Etymology
The term "Kulfi" is derived from the Persian word for a covered cup. The dessert likely originated in the Mughal Empire in the 16th century. The Persian traders and merchants who travelled to the Indian subcontinent might have introduced this dessert.
Ingredients
Kulfi is traditionally made with milk that has been simmered for several hours, sweetened with sugar, and flavored with ingredients such as cardamom, saffron, pistachio, and rose water. The mixture is then frozen in metal cones or earthen pots known as "kulhars" before being served.
Variations
There are several variations of Kulfi, including mango kulfi, pistachio kulfi, and malai kulfi. Each variation has a unique flavor profile and ingredients. For example, mango kulfi is made with pureed mangoes, while malai kulfi is made with heavy cream.
