 - 1 1/2 cups grated carrots
 - 1/2 cup chopped walnuts (optional)
 
Instructions
1. Preheat your oven to 350°F (175°C) and grease a loaf pan with butter or cooking spray.
2. In a medium-sized bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
3. In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy. You can use an electric mixer for this step if desired.
4. Beat in the eggs, one at a time, followed by the vanilla extract.
5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix, as this can result in a dense bread.
6. Fold in the grated carrots and chopped walnuts (if using) until evenly distributed throughout the batter.
7. Pour the batter into the greased loaf pan and smooth the top with a spatula.
8. Bake in the preheated oven for approximately 50-60 minutes, or until a toothpick inserted into the center comes out clean.
9. Once baked, remove the carrot bread from the oven and allow it to cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely before slicing.
