History
Cafe Rio was founded by Steve and Patricia Stanley in 1997. The first location opened in St. George, Utah, and quickly gained popularity for its unique take on traditional Mexican dishes. The restaurant's success led to expansion throughout Utah and eventually to other states.
In 2004, the Stanleys sold Cafe Rio to Bob Nilsen, who continued to expand the brand. Under new ownership, Cafe Rio opened locations in several states, including Arizona, California, Colorado, Idaho, Montana, Nevada, Virginia, Maryland, and Wyoming.
Menu
Cafe Rio's menu features a variety of Mexican-inspired dishes, including burritos, tacos, enchiladas, and salads. The restaurant is particularly famous for its sweet pork barbacoa, which is a customer favorite. All dishes are made fresh daily, with ingredients prepared in-house.
