Water activity (aw) is a measure of the availability of water in a substance for microbial growth and chemical reactions. It is defined as the ratio of the vapor pressure of water in a substance to the vapor pressure of pure water at the same temperature. Water activity is a crucial parameter in food science, pharmaceuticals, and cosmetics because it affects the stability and safety of products.

Definition[edit]

Water activity is expressed as a number between 0 and 1.0. Pure water has a water activity of 1.0, while completely dry substances have a water activity of 0. The formula for water activity is:

aw = P / P0

where P is the vapor pressure of water in the substance, and P0 is the vapor pressure of pure water at the same temperature.

Importance in Food Preservation[edit]

Water activity is a critical factor in food preservation because it influences the growth of microorganisms such as bacteria, yeasts, and molds. Most bacteria require a water activity of at least 0.91 to grow, while molds can grow at lower water activities, around 0.80. By controlling water activity, food manufacturers can inhibit microbial growth and extend the shelf life of products.
