Tvishi (wine)

Tvishi is a semi-sweet white wine produced in the Georgian region of Racha. It is made from the Tsitska and Tsolikouri grape varieties. The wine is named after the village of Tvishi, located in the Oni district of Racha.

History

The history of Tvishi wine dates back to ancient times. The region of Racha, where Tvishi is produced, has a long history of viticulture and winemaking. The unique microclimate and fertile soil of the region create ideal conditions for the cultivation of Tsitska and Tsolikouri grapes.

Production

Tvishi wine is produced using traditional Georgian winemaking methods. The grapes are hand-harvested and then crushed. The juice is then fermented in qvevri, large earthenware vessels buried in the ground. The fermentation process lasts for several weeks, after which the wine is transferred to another qvevri for aging. The wine is typically aged for several months before it is bottled and sold.

Characteristics

Tvishi wine is known for its distinctive semi-sweet taste and light golden color. It has a rich aroma of ripe fruits, with notes of apple, pear, and honey. The wine is medium-bodied, with a balanced acidity and a long, pleasant finish. Tvishi is typically served chilled and is often paired with desserts or cheese.

Recognition

Tvishi wine has received recognition both domestically and internationally. It has won several awards at international wine competitions and is considered one of the best examples of Georgian semi-sweet wines.
