Production Process

The production of Lowland single malts involves several key steps:

• Malting: Barley is soaked in water, allowed to germinate, and then dried in a kiln.
• Mashing: The malted barley is mixed with hot water to extract sugars, creating a liquid known as "wort."
• Fermentation: Yeast is added to the wort, converting sugars into alcohol and producing "wash."
• Distillation: The wash is distilled, typically three times, in copper pot stills to increase the alcohol content and refine the flavor.
• Maturation: The spirit is aged in oak casks, where it develops its final character over several years.
