Chitin
Chitin is a large, structural polysaccharide made from chains of modified glucose. It is a principal component of the cell walls of fungi, the exoskeletons of arthropods, such as crustaceans (e.g., crabs, lobsters, and shrimp) and insects, the radulae of mollusks, and the beaks of cephalopods, including octopuses and squids. Chitin is composed of repeating units of N-acetylglucosamine (a derivative of glucose).
