The term bean-to-bar refers to the process of producing chocolate directly from cocoa beans to the finished chocolate bar. The bean-to-bar process involves several key steps:

Sourcing

The process begins with the careful selection of cocoa beans. Bean-to-bar producers often source their beans directly from cacao farms, focusing on specific regions or farms known for high-quality beans. This direct trade approach can ensure better prices for farmers and higher quality beans for producers.

Roasting

Once the beans are sourced, they are roasted to develop their flavor. Roasting is a critical step that can significantly affect the final taste of the chocolate. Different producers may use varying temperatures and times to achieve their desired flavor profiles.

Cracking and Winnowing

After roasting, the beans are cracked and winnowed to remove the outer shell, leaving behind the cocoa nibs. These nibs are the purest form of cocoa and are the basis for all chocolate products.

Grinding and Conching

The nibs are then ground into a paste known as chocolate liquor. This paste is further refined in a process called conching, where it is continuously mixed and aerated to develop flavor and texture. The conching process can last from a few hours to several days, depending on the desired outcome.

Tempering and Molding

The final steps involve tempering the chocolate to stabilize it and give it a glossy finish, and then molding it into bars. Tempering involves carefully controlling the temperature of the chocolate to ensure that the cocoa butter crystallizes properly.
