Silver Service
Silver service, also known as English service, is a method of food service at the table, with a high level of waiter or waitress service. It is a technique of transferring food from a service dish to the guest's plate from the left. It is performed by a waiter using service forks and spoons from the diner's left.
History
Silver service has its origins in the manors, country seats, townhouses, and palaces of the British Isles. The term refers to the highest standards of service in the hospitality industry. The name "silver service" comes from the historical use of silverware for serving food.
Technique
In silver service, food is always served from the left, drinks and plated meals from the right. Plates are cleared from the right, again with the right hand. Glasses are stacked in a diagonal to the right and away, with wine (by course) in order and then water glass.
Training
Training for silver service waiting staff can be provided by specialized hospitality schools, and is also offered by private agencies. Many luxury hotels and restaurants prefer to hire trained silver service staff as it offers a superior experience for their guests.
Equipment
The equipment used for silver service is high quality and frequently heavy silverware. The cutlery is made of solid silver or silver-plated, and the serving dishes are silver or porcelain, which is traditionally English.
Silver Service in Different Cultures
Silver service has different interpretations and adaptations across various cultures. In some cultures, the order of service might be reversed, with guests being served from the right instead of the left.
