Pozharsky cutlet

History

According to legend, Tsar Nicholas I stopped at the inn during a journey and ordered a veal cutlet. When Pozharskaya discovered she had run out of veal, she improvised by using chicken instead, creating the dish that would become known as the Pozharsky cutlet.

The dish quickly gained popularity and was soon being served in restaurants in Moscow and Saint Petersburg. It was also included in various cookbooks of the time, including the famous A Gift to Young Housewives by Elena Molokhovets.
