Production Process[edit]

After the curds are sufficiently heated, they are drained and allowed to cool slightly. The cooled curds are then kneaded and stretched by hand, a process that gives Parenica its elastic texture. The cheese is then shaped into long strips, which are folded and rolled into the characteristic spiral shape.
