Paomo

From WikiMD's medical encyclopedia

Paomo is a specialty of Shaanxi cuisine and is a typical food eaten in the city of Xi'an. It is a hot stew of chopped-up steamed leavened bread, cooked in lamb broth and served with lamb meat, sometimes substituted with beef.

Etymology

The term "Paomo" is derived from the Chinese words "Pao" meaning soaked and "Mo" meaning bread. Thus, the term essentially refers to soaked bread.

Preparation

The preparation of Paomo involves soaking pieces of a dense, flat bread in a rich, flavorful broth. The bread is broken up into small chunks and then soaked in the broth to absorb the flavors. The broth is typically made from lamb or beef, and is seasoned with various spices and herbs. The dish is often served with pickled garlic and hot sauce.

Variations

There are several variations of Paomo, including Beef Paomo and Lamb Paomo. The main difference between these variations is the type of meat used in the broth. Some variations may also include additional ingredients, such as vegetables or tofu.

Cultural Significance

Paomo is a traditional dish in Shaanxi cuisine and is often eaten during special occasions and festivals. It is also a popular street food in Xi'an.
