Massimo Bottura is an internationally renowned Italian chef and restaurateur. He is the owner of Osteria Francescana, a three-Michelin-star restaurant based in Modena, Italy, which has been listed in the top 5 at The World's 50 Best Restaurants Awards since 2010 and received top ratings from Espresso, Gambero Rosso, and the Touring Club Italiano guide.
Early Life and Career
Bottura was born and raised in Modena in the Emilia-Romagna region of Italy. He developed an interest in cooking from a young age while watching his mother, grandmother, and aunt in the kitchen. His culinary career began in 1986 when he opened his first restaurant, Trattoria del Campazzo, on the outskirts of Modena.
Osteria Francescana
In 1995, Bottura opened Osteria Francescana in the historic centre of Modena. The restaurant showcases Bottura's innovative approach to traditional Italian cuisine, combining modern techniques with local ingredients. In 2012, Osteria Francescana was awarded its third Michelin star, making it one of the few restaurants in Italy to hold this prestigious rating.
Culinary Philosophy and Style
Bottura's culinary philosophy is deeply rooted in Italian tradition but also embraces innovation. He is known for his creative reinterpretations of classic Italian dishes, which often involve deconstructing them and reassembling them in new and unexpected ways. His signature dishes include "Five Ages of Parmigiano Reggiano" and "Oops! I Dropped the Lemon Tart".
Philanthropy
In addition to his work in the kitchen, Bottura is also known for his philanthropic efforts. In 2016, he founded the non-profit organization Food for Soul, which aims to fight food waste and social isolation by opening community kitchens around the world.
