Kansas City–style barbecue is a regional variation of barbecue that originated in Kansas City, Missouri. It is characterized by its use of a wide variety of meats, a thick tomato-based sauce, and a slow smoking process over a blend of woods, typically including hickory. Kansas City barbecue is known for its rich, smoky flavor and its emphasis on a sweet and tangy sauce.

History

The origins of Kansas City–style barbecue can be traced back to the early 20th century. The style was popularized by Henry Perry, who began serving smoked meats in the city in the 1920s. Perry's barbecue stand became a local favorite, and his methods and recipes laid the foundation for what would become Kansas City barbecue.

After Perry's death, his business was taken over by Charlie Bryant, and later by Arthur Bryant, who further developed the style and opened Arthur Bryant's Barbecue, one of the most famous barbecue restaurants in Kansas City. Another key figure in the development of Kansas City barbecue was George Gates, who founded Gates Bar-B-Q, another iconic establishment in the city.
