History

- 1 ½ cups graham cracker crumbs
 - ⅓ cup melted butter
 - 1 ½ cups milk
 - ½ cup granulated sugar
 - ¼ cup cornstarch
 - ¼ teaspoon salt
 - 4 large egg yolks
 - 1 teaspoon vanilla extract
 - 4 large egg whites
 - ¼ cup granulated sugar
 
Instructions
- Preheat the oven to 350°F (175°C).
 - In a bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch pie dish to form the crust.
 - In a saucepan, heat the milk over medium heat until it starts to steam.
 - In a separate bowl, whisk together the sugar, cornstarch, salt, and egg yolks until well combined.
 - Slowly pour the hot milk into the egg yolk mixture, whisking constantly.
 - Return the mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens and comes to a boil.
 - Remove the custard from the heat and stir in the vanilla extract.
 - Pour the custard into the prepared graham cracker crust.
 - In a clean bowl, beat the egg whites until soft peaks form. Gradually add the sugar and continue beating until stiff peaks form.
 - Spread the meringue over the custard, making sure to seal the edges.
 - Bake the pie in the preheated oven for 10-12 minutes, or until the meringue is golden brown.
 - Remove from the oven and let it cool completely before serving.
 
Variations
While the classic Flapper Pie recipe calls for a graham cracker crust, custard filling, and meringue topping, there are some variations that you can try. Some people like to add a layer of whipped cream on top of the custard before adding the meringue. Others may choose to use a different type of crust, such as a pastry crust or a chocolate cookie crust.
Serving and Storage
Flapper Pie is best served chilled. After baking, let the pie cool completely before refrigerating it for at least 2 hours. This will allow the custard to set and the flavors to meld together. Leftovers can be stored in the refrigerator for up to 3 days.
