The Denominación de Origen (DO) in Mexico is a certification granted to certain products that have a specific geographical origin and possess qualities or a reputation that are due to that origin. This concept is similar to the Appellation d'origine contrôlée (AOC) in France and the Denominazione di origine controllata (DOC) in Italy. The DO status is intended to protect the cultural heritage and traditional production methods of these products.
History
The concept of Denominación de Origen in Mexico was established to protect the unique characteristics of certain products that are inherently linked to their geographical origin. The first product to receive this designation was Tequila, which is perhaps the most internationally recognized Mexican product with a DO status. Over the years, other products have been added to the list, each with its own unique attributes and cultural significance.
Criteria for Denominación de Origen
To qualify for a Denominación de Origen, a product must meet specific criteria:
- Geographical Origin: The product must originate from a specific region in Mexico.
 - Quality and Characteristics: The product must have qualities or characteristics that are essentially due to its geographical origin.
 - Traditional Methods: The production methods must be traditional and specific to the region.
 
Products with Denominación de Origen
Tequila
Tequila is perhaps the most famous Mexican product with a Denominación de Origen. It is produced from the blue agave plant, primarily in the area surrounding the city of Tequila in the state of Jalisco. The DO for tequila covers several states, including Jalisco, Nayarit, Guanajuato, Michoacán, and Tamaulipas.
Mezcal
Mezcal is another agave-based spirit with a Denominación de Origen. Unlike tequila, mezcal can be made from a variety of agave species and is produced in several states, including Oaxaca, Guerrero, and Durango.
Coffee
Mexican coffee from the regions of Veracruz, Chiapas, and Oaxaca has been recognized for its unique flavor profiles and quality. The Denominación de Origen for coffee ensures that the beans are grown and processed in these specific regions.
Mango Ataulfo
The Ataulfo mango, also known as "Champagne mango," is a variety that has been granted DO status. It is primarily grown in the state of Chiapas, where the climate and soil conditions contribute to its sweet flavor and smooth texture.
Vanilla
Vanilla from the region of Papantla, Veracruz, is renowned for its rich aroma and flavor. The Denominación de Origen for vanilla protects the traditional methods of cultivation and curing that have been passed down through generations.
Habanero Chili
The habanero chili from the Yucatán Peninsula is known for its intense heat and fruity flavor. The DO status ensures that the chilies are grown in the specific climate and soil conditions of the region.
Arroz del Estado de Morelos
Rice from the state of Morelos has been granted Denominación de Origen due to its unique texture and flavor, which are attributed to the region's specific growing conditions.
