Bonefish Grill was established in 2000 with its first location in St. Petersburg, Florida. The founders, Tim Curci and Chris Parker, aimed to create a restaurant that offered high-quality seafood in a casual and inviting atmosphere. The concept quickly gained popularity, leading to the expansion of the chain to various locations throughout the United States.

In 2001, Bonefish Grill was acquired by Bloomin' Brands, a restaurant company that also owns other popular chains such as Outback Steakhouse, Carrabba's Italian Grill, and Fleming's Prime Steakhouse & Wine Bar. This acquisition provided Bonefish Grill with additional resources and support for further growth.
