Paella

The dish is widely regarded as Spain's national dish, but Spaniards almost unanimously consider it to be a dish from the Valencian region.
Gazpacho
Gazpacho is a soup made of raw, blended vegetables. A classic of Andalusian cuisine, it originated in the southern regions of Spain such as Andalusia. It is a cold soup usually served during the summer months, due to its refreshing qualities.
Tortilla Española
Tortilla Española (Spanish Omelette) is a traditional Spanish dish originating from the Iberian Peninsula. It is made with eggs, potatoes, and onions, although there are many variations that include other ingredients such as bell peppers or chorizo.
Cocido Madrileño
Cocido Madrileño is a traditional chickpea-based stew from Madrid. The dish is a classic of the city's cuisine and is served in three courses, or vuelcos, first the broth with noodles, then the chickpeas and vegetables, and finally the meat.
Fabada Asturiana
Fabada Asturiana is a rich Spanish bean stew, originally from the autonomous community of the Principality of Asturias, but widely available throughout the whole of Spain and in Spanish restaurants worldwide.
Pisto
Pisto is a Spanish dish originally from the Region of Murcia and Castilla La Mancha. It is made of tomatoes, onions, eggplant or courgettes, green and red peppers and olive oil.
Pollo al ajillo
Pollo al ajillo (Garlic Chicken) is a popular Spanish dish which combines chicken pieces with garlic, white wine, and sometimes chilli.
