Tom Khlong is a type of Thai soup that is characterized by its distinct sour flavor. The soup is traditionally made with pork ribs and is often served with rice. The sour flavor of the soup comes from the use of tamarind, which is a common ingredient in Thai cuisine.

Ingredients

The main ingredients of Tom Khlong are pork ribs, tamarind, galangal, lemongrass, kaffir lime leaves, chili peppers, fish sauce, and palm sugar. These ingredients are combined in a pot and simmered until the pork ribs are tender and the flavors have melded together.

Preparation

To prepare Tom Khlong, the pork ribs are first boiled in water to remove any impurities. The water is then discarded and the ribs are rinsed under cold water. The ribs are then returned to the pot and fresh water is added. The remaining ingredients are added to the pot and the soup is simmered until the pork ribs are tender and the soup has a rich, sour flavor.

Variations

There are many variations of Tom Khlong. Some recipes call for the addition of shrimp, chicken, or fish. Others may include additional vegetables such as mushrooms, tomatoes, or onions. The level of spiciness can also be adjusted to taste.
