Lutefisk is a traditional dish of the Nordic countries, particularly popular in Norway. It is made from aged stockfish (dried whitefish) or dried/salted whitefish (klippfisk) and lye (lut). Its preparation involves a long process of soaking the fish in water for several days, then in a lye solution, and then again in water to remove the lye.
