Español: «El Pan de Cruz se define como el pan formado por una pieza compacta y densa de trigo candeal, bregado de miga consistente, suave, esponjosa, blanca, sin alveolos y apariencia de algodón en forma de hogaza abombada, con corteza lisa, suave y crujiente con sabor a cereal tostado, en cuya cara anterior lleva dos profundos cortes perpendiculares en forma de cruz, que según la tradición, asegura la división de las piezas en cuarterones idénticos y, con ello, el reparto equitativo del mísmo. Para darle autenticidad, se marca la cara posterior de cada pieza con el signo identificativo de la Indicación Geográfica Protegida “Pan de Cruz de Ciudad Real”, consistente en la Cruz de Calatrava. Sus presentaciones son en forma de pan grande (750-850 g), pan pequeño (550-650 g), libreta (310-410 g) y panecillo de cruz (115-135 g).» |
