Description

Horseshoe crab, prepared and then put back into its shell in Si Racha, Thailand. The roe were cooked inside the shell, and you could scrape chunks of roasted roe off the inside of the shell with your fork or spoon.

The red sauce in the lower right hand corner is the holiest of holies - Nam Prik Si Racha - Si Racha sauce in Si Racha.
