Deutsch: Bocksbraten ist eine Spezialtität in der Umgebung von Bamberg, die meist zur Kirchweih angeboten wird. Es wird das Fleisch ausgewachsener Böcke verwendet, gelegentlich auch Fleischstücke von der Ziege. Aufgrund des intensiven Geschmacks des Fleisches, wird das Fleisch, ähnlich Sauerbraten, für mehrere Tage in eine Essigbeize eingelegt. Das gekochte Fleisch wird mit einer Blutsoße und Klößen gereicht.
English: Bocksbraten is a specialty in the surroundings of Bamberg, which is usually offered for the Kirchweih. The meat of adult goats is used, occasionally also meat pieces from the goat. Due to the intense taste of the meat, the meat, like Sauerbraten, is put into a vinegar stain for several days. The boiled meat is served with a blood sauce and dumplings. |
