Sorbitan tristearate is a nonionic surfactant that is used in the production of food and cosmetics. It is a waxy powder that is used as an emulsifier and stabilizer. It is produced by the esterification of sorbitol with stearic acid.

Chemical Structure[edit]

Sorbitan tristearate is a triglyceride that is derived from sorbitol and stearic acid. It has three ester groups, which are formed by the reaction of the hydroxyl groups of sorbitol with the carboxyl groups of stearic acid. The resulting compound is a waxy solid that is insoluble in water but soluble in organic solvents.

Uses[edit]

Sorbitan tristearate is used in a variety of applications due to its emulsifying and stabilizing properties. In the food industry, it is used as an anti-crystallizing agent in chocolate and other confectionery products. It is also used in the production of margarine and low-fat spreads. In the cosmetics industry, sorbitan tristearate is used as an emulsifier in creams and lotions.

Sorbitan tristearate is generally recognized as safe (GRAS) by the FDA. However, it should be used in moderation as excessive consumption can lead to digestive issues.
