Acıbadem kurabiyesi is a traditional Turkish cookie made of almond, sugar and egg whites. The name derives from the Turkish words acı (bitter) and badem (almond), referring to the bitter almonds which are traditionally used in the recipe.

History[edit]

The origins of Acıbadem kurabiyesi are believed to date back to the Ottoman Empire, where it was a popular delicacy in the imperial kitchen. The cookie is often associated with the city of Istanbul, although it is enjoyed throughout Turkey and in Turkish communities worldwide.

Preparation[edit]

The main ingredients of Acıbadem kurabiyesi are almond paste, sugar, and egg whites. The almond paste is made by grinding bitter almonds with regular almonds. The mixture is then combined with sugar and egg whites to form a dough. The dough is shaped into small balls, often decorated with an almond on top, and baked until lightly golden.

Consumption[edit]

Acıbadem kurabiyesi is often served with Turkish tea or Turkish coffee. It is a common treat during special occasions and celebrations, such as Eid al-Fitr at the end of Ramadan, and is also popular as a gift item.
