Water activity
Water activity (aw) is a measure of the energy status of the water in a system. It is defined as the vapor pressure of water above a sample divided by that of pure water at the same temperature; therefore, pure distilled water has a water activity of exactly one. As the water activity decreases, the amount of "free" water, water that can participate in chemical or physical reactions, decreases. Although it is not a direct measure of water content, it is used in many industries as a critical control point for product quality and safety.
Definition
