Ascorbyl palmitate

Ascorbyl palmitate is an ester formed from ascorbic acid and palmitic acid creating a fat-soluble form of vitamin C. Also known as vitamin C ester, it is used as an antioxidant and a source of vitamin C in various settings.

Etymology

The term "ascorbyl" is derived from the Latin word "ascorbicum", which means "without scurvy". The term "palmitate" comes from the Latin "palma", referring to the palm tree, from which palmitic acid was first derived.

Chemistry

Ascorbyl palmitate is a molecular compound made up of ascorbic acid and palmitic acid. It is a white to light yellowish powder that is odorless and has a slightly bitter taste. It is soluble in fats and oils but only slightly soluble in water.

Uses

Ascorbyl palmitate is used in food as an antioxidant and to enrich foods with vitamin C. It is also used in pharmaceuticals and cosmetics due to its antioxidant properties. In cosmetics, it is used to protect the skin from free radicals and to stimulate collagen production.

Safety

Ascorbyl palmitate is generally recognized as safe (GRAS) by the FDA. However, it can cause skin irritation in some people, especially those with sensitive skin.
