The history of 1519 Tequila dates back to the arrival of Hernán Cortés in Mexico in the year 1519. Cortés, a Spanish conquistador, brought with him the knowledge of distillation techniques from Europe. Upon discovering the agave plant, he recognized its potential for producing a unique and flavorful spirit.

Cortés and his men began experimenting with the distillation of agave, leading to the creation of what is now known as tequila. The process involved harvesting the agave plant, roasting its core, extracting the juice, fermenting it, and finally distilling it to obtain the desired spirit.

Production Process

Once the agave plants reach maturity, they are harvested by skilled jimadores, who carefully remove the leaves to reveal the heart, or piña, of the plant. The piñas are then roasted in traditional brick ovens to release their natural sugars and develop the distinct flavors of the tequila.

After roasting, the piñas are crushed to extract the juice, which is then fermented using natural yeast. The fermentation process converts the sugars into alcohol, creating the base for the tequila. The fermented juice is then distilled in copper stills to remove impurities and refine the flavors.
