Cinta Senese is a breed of domestic pig originating from the Siena province in Tuscany, Italy. The breed is named after the city of Siena and is known for its distinctive white "belt" (or "cinta" in Italian) that encircles its chest and shoulders.

History

The Cinta Senese has a long history dating back to the 14th century, as depicted in frescoes and paintings of the time. The breed was nearly extinct in the mid-20th century but has seen a resurgence due to efforts by local farmers and organizations.

Characteristics

The Cinta Senese is a medium to large-sized pig with a robust and hardy physique. It has a black coat with a distinctive white belt (or "cinta") around its chest and shoulders. The breed is known for its high-quality meat, which is used in the production of various Italian delicacies such as Prosciutto, Salami, and Sausages.

Breeding and Production

Cinta Senese pigs are typically raised in semi-wild conditions, foraging in the forests of Tuscany. This natural diet contributes to the unique flavor and quality of their meat. The breed is protected by the Protected Designation of Origin (PDO) status in the European Union, ensuring that only pigs raised in specific regions of Tuscany can be marketed as Cinta Senese.

Culinary Use

The meat of the Cinta Senese is highly prized in Italian cuisine. It is known for its rich flavor, tender texture, and high levels of beneficial fatty acids. The meat is used in a variety of traditional Italian dishes and cured meats, including Prosciutto di Cinta Senese, Salami di Cinta Senese, and Salsiccia di Cinta Senese.

Conservation Status

The Cinta Senese was at risk of extinction in the mid-20th century, but efforts by local farmers and organizations have helped to revive the breed. Today, it is considered a valuable part of Italy's agricultural and culinary heritage.
