Manchego is a type of cheese that originates from the La Mancha region of Spain. It is made from the milk of the Manchega breed of sheep. The cheese has a firm and compact consistency and a buttery texture, and often contains small, unevenly distributed air pockets. The color of the cheese varies from white to ivory-yellow, and its rind, which is inedible, has a distinctive herringbone pattern, a result of the traditional esparto grass molds used in its production. Production

  • Semicurado - aged for 3 to 6 months
  • Curado - aged for 6 to 12 months
  • Viejo or Añejo - aged for 1 year or longer

The flavor of the cheese deepens as it ages, transitioning from mild and creamy in the fresco variety to nutty and rich in the curado and viejo varieties.
