Amylomaize is a term used to describe varieties of corn (Zea mays) that have been bred to contain a high percentage of amylose, a type of starch. Amylose is a linear polymer of glucose and is one of the two components of starch, the other being amylopectin. Amylopectin is highly branched, whereas amylose is mostly linear. This difference in structure leads to different properties in the starches, including how they are digested by humans.
