Rice pudding

Rice pudding (/raɪs 'pʊdɪŋ/) is a dish made from rice mixed with water or milk and other ingredients such as cinnamon and raisins. Variants are used for either desserts or dinners. When used as a dessert, it is commonly combined with a sweetener such as sugar.

Etymology

The term "rice pudding" is first recorded in the 17th century, although the dish itself is likely much older. The word "rice" originates from the Old French ris, which comes from the Italian riso, in turn from the Latin risum. The word "pudding" comes from the French boudin, originally from the Latin botellus, meaning "small sausage", referring to encased meats used in Medieval European puddings.

Ingredients

Rice pudding is made by boiling rice with water or milk and adding sugar and other ingredients such as cinnamon and raisins. Some recipes may also include eggs, for a custard-like consistency. Variations of rice pudding can be found in nearly every area of the world, with significant differences in both taste and texture.

Variations

There are many variations of rice pudding around the world. In the United States, it is usually made with milk and sugar and is often served as a dessert. In the United Kingdom, rice pudding is traditionally served as a dinner, often with a sweet jam or syrup. In Asia, rice pudding is a common breakfast food, and can be made with coconut milk and spiced with cinnamon or cardamom.

Health considerations

Rice pudding is generally high in carbohydrates due to the rice and sugar, and can also be high in fat if made with full-fat milk or cream. However, it can be made healthier by using whole grain rice, reducing the sugar, and using low-fat milk or a milk substitute.
